Ingredients

  • 3 cups rice puffs (or crushed plain rice cakes)
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ cup desiccated coconut
  • 60g butter
  • Pinch of salt

For the topping

  • 100g dark chocolate
  • 1 tsp coconut oil

Method

  • Add rice puffs (or crushed rice cakes) to the Nutribullet Triple Prep System food processor and pulse until crushed to your preferred texture. Add coconut and salt and pulse until combined.
  • In a small saucepan or microwave-safe bowl, melt butter, peanut butter and honey together until smooth and combined.
  • Pour the wet mixture directly into the food processor with the dry ingredients and pulse until everything is evenly coated and sticky. If the mixture feels too dry, add an extra 1–2 tbsp peanut butter or a small drizzle of honey to help bind.
  • Press mixture very firmly into a lined container or slice tin.
  • Place in the fridge to set.
  • Meanwhile, melt chocolate with coconut oil until smooth.
  • Remove slice from the fridge and spread chocolate evenly over the top.
  • Return to the fridge for 1–2 hours or until set, then slice and serve.

Best with a cup of tea and nowhere else to be.
