Apple and Cinnamon Muffins

Ingredients

  • 1 cup plain flour (or ¾ cup plain flour + ¼ cup protein powder)
  • ½ cup Greek yoghurt
  • 1 egg
  • ⅓ cup honey or maple syrup
  • 3 tbsp melted butter or oil
  • 3–4 tbsp milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • Pinch of salt
  • 1 small apple, finely chopped

Optional: sprinkle of brown sugar on top, chopped nuts

Method

  1. Preheat oven to 180°C and line or grease a muffin tray.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon and salt.
  3. Add yoghurt, egg, honey or maple syrup, melted butter and vanilla to the Nutribullet Triple Prep System blender and blitz until smooth and combined.
  4. Add dry ingredients into the blender and pulse until just combined. Add milk as needed to create a smooth, slightly thick batter, don’t over-blend.
  5. Use the Nutribullet Triple Prep System food processor to finely chop the apple, then fold through the batter.
  6. Spoon into muffin tray and optionally sprinkle a little brown sugar or oats on top.
  7. Bake for 18–22 minutes or until golden and a skewer comes out clean.
  8. Allow to cool slightly before serving.
