Ingredients

  • ¾ cup plain flour (or ½ cup plain flour + ¼ cup protein powder)
  • ½ cup yoghurt
  • 1 egg
  • 2 tsp butter
  • 2 tsp milk
  • 2 tsp honey
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp vanilla extract

Optional: fresh or frozen fruit (chopped), choc chips, etc

Method

  1. Add all ingredients (except optional inclusions) to the Nutribullet Triple Prep System and blitz until smooth. Alternatively, whisk dry ingredients in a bowl, add wet ingredients and mix until just combined.
  2. If using optional inclusions, stir them through the batter after blending or mixing (do not blend them).
  3. Heat a pan over medium heat and melt butter. Add batter to the pan (pancakes or smaller pikelets to your desired size).
  4. When bubbles form on the surface and edges begin to set, flip and cook for a further 1–2 minutes until golden and cooked through.

To serve:

Serve stacked with Greek yoghurt, fresh fruit, and a drizzle of honey or maple syrup.
