Ingredients

  • 1 cup dates (pitted)
  • ¼ cup peanut butter
  • 2 tbsp cocoa powder
  • ¼ cup desiccated coconut (plus extra for rolling)
  • 1 tbsp chia seeds
  • 3 tbsp maple syrup or honey
  • 1 tsp salt
  • Optional: ¼ cup protein powder

Method

  1. Add dates to the Nutribullet Triple Prep System food processor and blend until broken down and sticky.
  2. Add peanut butter, cocoa powder, maple syrup or honey, and salt and blend until a smooth, sticky paste forms.
  3. Add desiccated coconut and chia seeds, then pulse until combined. If using protein powder, add it in at this stage and blend until combined — add 1–2 tsp extra peanut butter or maple syrup as needed to bring the mixture together.
  4. Roll mixture into approximately 10 balls, then roll in extra coconut if desired.
  5. Place in the fridge for 20–30 minutes to firm up before serving.
