Ingredients

  • 16 Weet-bix (crushed)
  • 2 tbsp cocoa powder
  • ½ cup desiccated coconut
  • Pinch of salt
  • ¼ cup honey
  • 80g butter
  • 1–2 tbsp milk
  • Optional: ¼ cup protein powder (add an extra 1 tbsp milk if using)

For the topping:

  • 100g dark chocolate
  • 1 tsp coconut oil

Method

  1. Add Weetbix to the Nutribullet Triple Prep System food processor and pulse until crushed. Add cocoa powder, desiccated coconut and salt and pulse until combined.
  2. In a small saucepan or microwave-safe bowl, melt butter and honey together until smooth.
  3. Pour the wet mixture into the Nutribullet Triple Prep System and pulse until everything comes together. Add milk and mix until combined. If using protein powder, add it in and pulse, then add an extra 1 tbsp milk if needed to help bind.
  4. Press mixture firmly into a lined container or slice tin and place in the fridge to set.
  5. Meanwhile, melt dark chocolate with coconut oil until smooth.
  6. Remove slice from the fridge and spread melted chocolate evenly over the top.
  7. Return to the fridge for 1–2 hours or until set, then slice and serve.
